Dandelion Wine Recipe

Desert Dandelion

Some of us despise this ‘flower’ others enjoy it…

But, did you know that you could make wine from Dandelions?

7 cups of Dandelion Petals

1/2 pint of Danny’s fortified white grape concentrate

1 gal of hot water

2 lbs of dextrose

3 tsp of Acid Blend

1/4 tsp of Tannin

1/2 tsp Energizer

1 Campden Tablet, crushed

1 pkg of Dandelion specific yeast

You want the Specific Gravity to be at 1.090-95

Method:

Cut off and use yellow petals only when flowers are fully opened.  Avoid sprayed plants and discard all green parts as they impart bitterness to the wine.

  1. wash and drain petals. Put in nylon straining bag, tie top and put in primary fermentor.
  2. Pour over hot water, stir in dextrose, and add in all other ingredients EXCEPT yeast. Cover Primary.
  3. After 24hrs. add yeast. Cover primary
  4. Stir Daily, check Specific Gravity with Hydrometer, and press pulp lightly to add extraction.
  5. When ferment reaches 1.040 (3-5 days) strain pulp lightly out of bag. Siphon wine off  sediment into glass jug secondary.  Attach air lock.
  6. When ferment is complete (Specific Gravity has dropped to 1.000 –about 3 weeks) siphon off sediment into clean secondary. Reattach lock.
  7. Siphon again in a 1 month and again if necessary until clear before bottling

Who would of thought, that you could turn a weed into a unique wine.
