Homemade Cranberry Fruit Wine
Delicious cranberry fruit wine will compliment a whole season of holiday meals and can make beautiful gifts for all your friends and family, on a budget!

For this recipe, you will also need a hydrometer, nylon straining bag and dextrose.
Ingredients:
12-15 lbs. (5.5 - 7kg) fresh cranberries
3 pints (1.5L) red grape concentrate
4 gal. (15L) water
10 lbs. (4.5kg) sugar (dextrose)
2.5 tsp. pectic enzyme
2.5 tsp. energizer
5 tablets campden
1 pkg. wine yeast
Starting specific gravity: 1.095 - 1.100 (read this article about Using A Hydrometer for more info)
1. Wash and place the cranberries in a nylon straining bag. Press, crush and strain out juice into your primary fermentor. Keeping all pulp in the nylon bag, tie the top and place in fermentor.
2. Stir in all other ingredients except yeast. Cover primary fermentor.
3. After 24 hours, add yeast. Cover and apply air lock to primary fermentor.
4. Stir daily, checking the specific gravity and pressing the pulp lightly to add extraction.
5. When ferment reaches 1.030 (about 5 days), strain juice lightly from the bad and siphon off wine to the secondary fermentor. Attach airlock.
6. When ferment is complete (S.G. reading has dropped below 1.000 - about 3 weeks). Siphon off sediment into a clean secondary fermentor and reattach airlock.
7. Rack again in 8 weeks if necessary. Add stabilizer if wine will be kept longer than 6 months. Filter if desired, and bottle.
